Ingredients

  • 2 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.75 cup heavy cream, plus extra for brushing
  • 1 teaspoon vanilla extract
  • 8 pieces chocolate sandwich cookies, coarsely chopped
  • 0.5 cup powdered sugar
  • 1-2 tablespoons milk (for glaze)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

Add the cold cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, cut the butter into the mixture until it resembles coarse crumbs.

Step 4

In a small bowl, whisk together the heavy cream and vanilla extract. Pour the wet ingredients into the dry mixture and stir until just combined. The dough may look slightly crumbly, but this is normal.

Step 5

Gently fold in the chopped chocolate sandwich cookies, distributing them evenly throughout the dough.

Step 6

Turn the dough out onto a lightly floured surface and shape it into a circle about 1 inch thick and 7 inches in diameter. Use a sharp knife or bench scraper to cut the circle into 8 equal wedges.

Step 7

Place the wedges onto the prepared baking sheet, leaving space between each scone. Brush the tops lightly with extra heavy cream to encourage browning.

Step 8

Bake the scones in the preheated oven for 15-18 minutes, or until the edges are golden brown. Remove from the oven and allow them to cool on a wire rack.

Step 9

While the scones are cooling, prepare the glaze by whisking together the powdered sugar and 1-2 tablespoons of milk until smooth and pourable.

Step 10

Drizzle the glaze over the cooled scones and let it set before serving.
