Ingredients

  • 1 cup Fine bulgur wheat
  • 1 cup Boiling water
  • 1.5 pounds Ground beef or lamb (or a mix)
  • 1 medium Onion, finely grated
  • 3 Garlic cloves, minced
  • 1 teaspoon Ground allspice
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Ground cumin
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Fresh parsley leaves, finely chopped
  • 2 tablespoons Fresh mint leaves, finely chopped
  • 2 tablespoons Olive oil
  • 0.25 cup Pine nuts (optional)
  • 2 tablespoons Tomato paste
  • 0.25 cup Water

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a standard loaf pan with a bit of olive oil or nonstick spray.

Place the bulgur wheat in a large bowl. Pour the boiling water over it, cover, and let it sit for 10 minutes to soften.

Once the bulgur has absorbed the water and softened, fluff it with a fork. Drain any excess water, if needed.

To the bowl with the bulgur, add the ground beef or lamb, grated onion, minced garlic, allspice, cinnamon, cumin, salt, black pepper, parsley, and mint. Mix everything together thoroughly using your hands or a sturdy spatula until evenly combined.

In a small bowl, whisk together the tomato paste, water, and 1 tablespoon of olive oil. Spread this mixture evenly over the top of the meatloaf as a glaze.

Bake in the preheated oven for 40–45 minutes, or until the meatloaf is fully cooked and the internal temperature reaches 160°F (71°C).

Allow the meatloaf to rest for 10 minutes before slicing so it holds its shape.
