Ingredients

  • 500 grams button mushrooms (or cremini mushrooms)
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 2 pieces garlic cloves
  • 1 teaspoon fresh thyme leaves (optional)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper, freshly ground
  • 1 teaspoon lemon juice (optional)

Directions

Step 1

Clean the mushrooms by gently wiping them with a slightly damp paper towel to remove dirt. Avoid soaking the mushrooms in water as they absorb moisture easily.

Step 2

Trim the ends of the mushroom stems and slice the mushrooms evenly into thick slices (approximately 5 mm wide). If using small mushrooms, you can leave them whole.

Step 3

Peel and finely mince the garlic cloves.

Step 4

Heat the olive oil in a large skillet over medium-high heat until shimmering.

Step 5

Add the mushrooms to the skillet in a single layer. Avoid overcrowding the pan to allow them to sear properly. Cook undisturbed for 3-4 minutes to develop a golden-brown crust on one side.

Step 6

Stir the mushrooms gently and continue cooking for another 4-5 minutes, stirring occasionally, until they are evenly golden and have released their moisture.

Step 7

Reduce the heat to medium. Add the butter and minced garlic to the skillet. Stir well to coat the mushrooms in the butter and to cook the garlic until fragrant, about 1-2 minutes.

Step 8

Sprinkle the fresh thyme leaves (if using), salt, and black pepper over the mushrooms. Stir to combine, tasting and adjusting the seasoning if needed.

Step 9

If desired, drizzle with a touch of lemon juice for a bright, fresh finish.

Step 10

Remove from heat and serve immediately as a side dish, a topping for steak or pasta, or added to salads and sandwiches.
