Ingredients

  • 2 large Egg yolks
  • 2 cloves Garlic
  • 4 pieces Anchovy fillets
  • 2 teaspoons Dijon mustard
  • 3 tablespoons Freshly squeezed lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/3 cup Olive oil
  • 1/2 cup Grated Parmesan cheese
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Water

Directions

Step 1

Finely mince the garlic and anchovy fillets. You can also mash them together with the back of a knife to form a paste for a smoother texture.

Step 2

In a small heatproof bowl, whisk together the egg yolks, minced garlic, anchovy paste, and Dijon mustard until fully combined.

Step 3

Place the bowl over a pot of simmering water to create a double boiler. Ensure the bottom of the bowl does not touch the water. Stir constantly for 2-3 minutes or until the mixture thickens slightly and reaches 160°F to ensure food safety.

Step 4

Once thickened, remove the bowl from the heat and whisk in the lemon juice, Worcestershire sauce, and water to cool the mixture slightly and enhance the tangy flavor.

Step 5

Gradually whisk in the olive oil in a slow, steady stream until the dressing emulsifies and becomes creamy.

Step 6

Stir in the grated Parmesan cheese, salt, and black pepper. Taste and adjust seasoning as necessary.

Step 7

Let the dressing cool completely before using. Store in an airtight container in the refrigerator for up to 3 days.

Step 8

Toss with crisp romaine lettuce, croutons, and additional Parmesan cheese for a classic Caesar salad.
