Ingredients

  • 1 cup couscous
  • 1 cup water
  • 0.5 teaspoon salt
  • 2 tablespoons olive oil
  • 0.5 cup dates, chopped
  • 0.25 cup almonds, chopped and toasted
  • 0.25 cup pistachios, chopped
  • 0.25 teaspoon cinnamon powder
  • 0.25 teaspoon cumin powder
  • 1 tablespoon honey
  • 1 teaspoon lemon zest
  • 2 tablespoons parsley, chopped
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring 1 cup of water to a boil in a medium saucepan. Add 0.5 teaspoon of salt and 1 tablespoon of olive oil to the water.

Step 2

Remove the saucepan from heat and gradually stir in 1 cup of couscous. Cover the pan with a lid and let it sit for 5 minutes to allow the couscous to absorb the water.

Step 3

After 5 minutes, fluff the couscous with a fork to separate the grains.

Step 4

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 0.25 teaspoon of cinnamon and 0.25 teaspoon of cumin, stirring for 30 seconds to release the spices' aroma.

Step 5

Add the chopped dates, 0.25 cup of toasted almonds, and 0.25 cup of pistachios to the skillet. Stir them gently for 2 minutes to warm them and coat them in the spices.

Step 6

Drizzle in 1 tablespoon of honey and sprinkle in 1 teaspoon of lemon zest. Mix well until the dates and nuts are lightly caramelized, about 1 minute.

Step 7

Remove the mixture from heat and gently fold it into the fluffed couscous in a large mixing bowl.

Step 8

Add 2 tablespoons of chopped parsley and season with 0.25 teaspoon of black pepper. Toss thoroughly to ensure even distribution of flavors.

Step 9

Taste and adjust the seasoning if needed. Serve warm or at room temperature.
