Ingredients

  • 4 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 1 cup Chicken or vegetable stock
  • 0.5 cup Heavy cream
  • 3 tablespoons Fresh lemon juice
  • 1 teaspoon Lemon zest
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 teaspoon Chopped fresh parsley (optional)

Directions

Step 1

Melt the unsalted butter in a medium-sized saucepan over medium heat.

Step 2

Once the butter has melted, add the all-purpose flour and whisk continuously for 1-2 minutes to form a smooth roux. Do not let it brown.

Step 3

Gradually pour in the chicken or vegetable stock while whisking constantly to avoid lumps. Continue whisking until the mixture is smooth and starts to thicken, about 3-4 minutes.

Step 4

Reduce the heat to low and stir in the heavy cream, mixing well.

Step 5

Add the fresh lemon juice and lemon zest, stirring to combine. Let the sauce simmer for another 3-4 minutes until it thickens further.

Step 6

Season the sauce with salt and ground black pepper to taste.

Step 7

If desired, stir in the fresh parsley for added color and flavor.

Step 8

Remove the sauce from the heat and serve warm. Drizzle it over steamed vegetables, baked chicken, grilled fish, or pasta.
