Ingredients

  • 4 medium-sized Beets
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 2 cloves Garlic
  • 1 sprig Fresh rosemary
  • 3 sprigs Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Balsamic vinegar
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash the beets thoroughly and trim off the stems and roots. Peel the beets and cut them into 1-inch cubes.

Step 3

Place the cubed beets on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil, and sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Toss to coat evenly.

Step 4

Roast the beets in the preheated oven for 25–30 minutes, stirring halfway through, until they are tender and slightly caramelized at the edges.

Step 5

While the beets are roasting, mince the garlic and finely chop the fresh parsley.

Step 6

In a skillet, heat the remaining 1 tablespoon of olive oil and the butter over medium heat until the butter is melted and starting to foam.

Add the minced garlic, rosemary sprig, and thyme sprigs to the skillet. Sauté for 1–2 minutes, stirring frequently, until the garlic is fragrant but not browned.

Once the beets are done roasting, remove the rosemary and thyme sprigs from the skillet, and add the roasted beets to the skillet. Toss the beets to coat them in the garlic butter mixture.

Drizzle the balsamic vinegar over the beets and cook for an additional 2–3 minutes, stirring frequently, until the vinegar slightly reduces and coats the beets.

Step 10

Transfer the beets to a serving dish, sprinkle with the chopped parsley, and adjust seasoning with more salt and pepper if needed.

Serve warm as a side dish or enjoy as a light main course alongside crusty bread.
