  • 6 large Russet potatoes

  • 1 cup Sour cream

  • 2 cups Sharp cheddar cheese, shredded

  • 4 stalks Green onions, thinly sliced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the Russet potatoes clean and pierce each one several times with a fork. Place them directly on the oven rack and bake for 1 hour, or until tender when pierced with a knife.

Step 3

Remove the potatoes from the oven and let them cool slightly until they are safe to handle (about 10 minutes). Reduce the oven temperature to 350°F (175°C).

Cut the potatoes in half lengthwise and scoop out the flesh into a large mixing bowl, leaving a thin layer of potato in the skins for structure.

Add the butter, sour cream, and milk to the warm potato flesh. Mash with a potato masher or hand mixer until creamy and smooth.
