Ingredients

  • 1 piece Pre-made pie crust
  • 150 grams Chorizo sausage
  • 100 grams Manchego cheese, shredded
  • 100 grams Roasted red peppers, diced
  • 50 grams Fresh spinach
  • 4 Eggs
  • 250 milliliters Half-and-half cream
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Prepare a 9-inch pie dish by placing the pre-made pie crust into it, pressing it gently into the sides. Trim any excess crust.

Step 2

In a medium skillet, heat the olive oil over medium heat. Add the chorizo, breaking it into small pieces as it cooks. Cook for 5-7 minutes, or until browned and cooked through. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, whisk together the eggs, half-and-half cream, smoked paprika, salt, and black pepper until well combined.

Step 4

Spread the cooked chorizo evenly over the bottom of the pie crust. Layer the roasted red peppers, fresh spinach, and shredded Manchego cheese on top of the chorizo.

Step 5

Pour the egg mixture over the filling, making sure it spreads evenly throughout the pie dish.

Step 6

Place the quiche on the middle rack of the oven and bake for 35-40 minutes, or until the center is set and the top is lightly golden brown.

Step 7

Remove the quiche from the oven and let it cool for 10 minutes before slicing. Serve warm or at room temperature.
