Ingredients

  • 500 grams Red or black seedless grapes
  • 2 tablespoons Honey
  • 1 tablespoon Olive oil
  • 200 grams Mascarpone cheese
  • 100 milliliters Heavy cream
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 60 grams Almonds
  • 50 grams Rolled oats
  • 40 grams Unsalted butter
  • 2 tablespoons Brown sugar

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

Step 2

Rinse the grapes and spread them out evenly on the prepared baking tray. Drizzle with honey and olive oil, then roast in the preheated oven for 15–20 minutes until they caramelize and burst slightly. Remove and let cool.

Step 3

While the grapes roast, prepare the almond crumble. In a small pan over medium heat, melt the butter. Add the almonds, rolled oats, and brown sugar, stirring until everything is coated and golden brown, about 5 minutes. Set aside to cool.

Step 4

In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip the mixture using a hand mixer or whisk until light, creamy, and soft peaks form.

Step 5

To assemble, divide the roasted grapes among serving glasses or bowls. Add a layer of the mascarpone cream, then sprinkle almond crumble generously on top.

Step 6

Serve immediately or chill in the refrigerator for 15 minutes before serving for an extra refreshing touch.
