Ingredients

  • 3 tablespoons Extra virgin olive oil
  • 5 pieces Garlic cloves
  • 2 tablespoons Calabrian chili paste
  • 28 ounces Crushed tomatoes (canned)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 teaspoon Dried oregano
  • 6 pieces Fresh basil leaves
  • 0.5 teaspoon Freshly ground black pepper
  • 0.5 cups Pasta water (reserved)

Directions

Step 1

Heat the extra virgin olive oil in a large skillet or saucepan over medium heat.

Step 2

Finely mince the garlic cloves and add them to the hot oil. Sauté until fragrant, about 1 minute, being careful not to burn the garlic.

Step 3

Stir in the Calabrian chili paste and cook for another 1 minute to release its flavors.

Step 4

Add the crushed tomatoes and tomato paste to the pan. Stir everything together until well combined.

Season the sauce with salt, sugar, dried oregano, and freshly ground black pepper. Stir to incorporate.
