Ingredients

  • 1.5 pounds beef stew meat
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 medium potatoes, peeled and diced
  • 4 cups beef broth
  • 14.5 ounces diced tomatoes (canned, with juice)
  • 2 tablespoons parsley, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons flour
  • 0.25 cups cold water

Directions

Step 1

Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 2

Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove the beef and set it aside.

Step 3

In the same pot, add the chopped onion, carrots, and celery. Sauté for 5 minutes until vegetables start to soften.

Step 4

Add the diced potatoes to the pot and stir to combine.

Step 5

Return the browned beef to the pot.

Step 6

Pour in the beef broth and the canned diced tomatoes with their juice.

Step 7

Add the parsley, dried thyme, dried basil, salt, and black pepper. Stir well to combine.

Step 8

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are fully cooked.

Step 9

In a small bowl, whisk together the flour and cold water to create a slurry.

Step 10

Gradually stir the slurry into the simmering stew to thicken the broth.

Step 11

Continue cooking for 5 more minutes, stirring occasionally, until the broth has thickened to your desired consistency.

Step 12

Taste and adjust seasoning if necessary.

Step 13

Serve hot, garnished with additional chopped parsley if desired. Enjoy your Connecticut Beef Supper!
