Ingredients

  • 12 ounces rotini pasta
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1.5 cups cherry tomatoes
  • 1 medium cucumber
  • 0.5 red onion
  • 0.75 cups feta cheese, crumbled
  • 0.5 cups black olives, sliced
  • 0.25 cups extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil over high heat. Cook the rotini pasta according to package instructions until al dente. Drain and rinse the pasta under cold water to cool it down and stop the cooking process. Set aside.

While the pasta is cooking, prepare the vegetables. Dice the red, yellow, and green bell peppers into small, bite-sized pieces. Halve the cherry tomatoes. Peel and dice the cucumber. Thinly slice the red onion. Set all the vegetables aside.
