Ingredients

  • 16 oz Cheese tortellini
  • 2 tbsp Olive oil
  • 2 cups Cherry tomatoes
  • 1 medium Zucchini
  • 1 Yellow bell pepper
  • 1 small Red onion
  • 3 Garlic cloves
  • 10 leaves Fresh basil leaves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Balsamic glaze
  • 0.5 cup Parmesan cheese, grated

Directions

Step 1

1. Bring a large pot of salted water to a boil. Cook the cheese tortellini according to the package instructions. Drain and set aside.

2. While the tortellini cooks, heat the olive oil in a large skillet over medium heat.
