Ingredients

  • 6 medium Russet potatoes
  • 2 medium Carrots
  • 1 medium Red bell pepper
  • 3 stalks Green onions
  • 4 tablespoons Unsalted butter
  • 0.5 cups Whole milk
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and chop the russet potatoes into evenly sized chunks for even cooking.

Step 2

Place the potatoes into a large pot, cover with cold water, and add a big pinch of salt. Bring to a boil and cook for 15-20 minutes, or until fork-tender.

While the potatoes are cooking, prepare the vegetables. Dice the carrots and red bell pepper into small, even pieces. Finely slice the green onions and chop the parsley.
