  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil

  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 2 cups Bell peppers (red, yellow, or green), diced
  • 1 cup Frozen corn
  • 2 cups Fresh spinach, chopped
  • 1.5 cups Shredded mozzarella cheese
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 0.25 cup Mayonnaise
  • 0.75 cup Panko breadcrumbs
  • 0.25 cup Parmesan cheese, grated
  • 2 tablespoons Butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with olive oil or cooking spray.

Step 2

Season the chicken breasts with salt, black pepper, paprika, and garlic powder on both sides.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown but not fully cooked. Remove them from the skillet and set aside.
