Ingredients

  • 500 ml Whole milk
  • 1 piece Vanilla bean (or 1 tablespoon vanilla extract)
  • 4 pieces Egg yolks
  • 100 grams Granulated sugar
  • 25 grams Cornstarch
  • 20 grams Unsalted butter

Directions

Step 1

In a medium saucepan, pour the milk and split the vanilla bean lengthwise. Scrape the seeds into the milk before adding the pod. If using vanilla extract, add it later with the egg yolks. Heat the milk over medium heat until it just starts to simmer. Remove from heat and let it infuse for 5-10 minutes.

Step 2

In a medium mixing bowl, whisk together the egg yolks and granulated sugar until pale and creamy. Sift in the cornstarch and whisk until smooth and lump-free.

Slowly pour the warm milk into the egg mixture in a thin stream, whisking constantly to temper the eggs and prevent curdling.

Strain the mixture through a fine-mesh sieve back into the saucepan to remove any lumps or the vanilla pod.

Place the saucepan over medium-low heat. Cook the custard, whisking constantly, until it thickens and begins to bubble. This should take about 5-7 minutes. Be careful not to let it overheat or burn.

Step 6

Once thickened, remove the saucepan from the heat and whisk in the butter until completely melted and incorporated. If using vanilla extract, add it now and stir well.

Transfer the custard to a clean bowl and cover it with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming. Allow it to cool to room temperature, then refrigerate until completely chilled, about 2 hours.

Once chilled, give the custard a quick whisk before using it as a filling or topping. Serve as desired.
