Ingredients

  • 4 cups Concord grapes
  • 2 cups Granulated sugar
  • 1 teaspoon Orange zest
  • 2 tablespoons Orange juice
  • 0.5 cup Chopped walnuts
  • 0.25 cup Water

Directions

Step 1

Wash the Concord grapes thoroughly and remove the stems.

Step 2

Separate the grape skins from the pulp by pinching each grape. Place the skins in one bowl and the pulp in another.

Step 3

In a medium saucepan, combine the grape pulp and water. Cook over medium heat until the pulp softens and the seeds begin to separate, about 10 minutes.

Step 4

Pass the cooked pulp through a fine-mesh sieve or food mill to remove the seeds. Discard the seeds and set the seedless pulp aside.

Step 5

In a large saucepan, combine the grape skins, seedless pulp, granulated sugar, orange zest, and orange juice.

Step 6

Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low. Simmer gently, stirring frequently, for 30 minutes or until the mixture begins to thicken.

Step 7

Stir in the chopped walnuts and continue to cook for an additional 5 minutes, ensuring the conserve has a thick, spreadable consistency.

Step 8

Remove the saucepan from the heat and let the conserve cool slightly.

Step 9

While the conserve is still warm, transfer it to sterilized jars, leaving about 1/4 inch of headspace. Seal the jars with lids and bands.

Step 10

Allow the jars to cool completely at room temperature before storing in the refrigerator for up to 2 weeks or processing them in a boiling water bath for longer shelf life.
