Ingredients

  • 2 cups Conch meat (cleaned and diced finely)
  • 1 cup All-purpose flour
  • 0.5 cup Cornmeal
  • 2 teaspoons Baking powder
  • 1 large Egg
  • 0.5 cup Whole milk
  • 0.5 cup Bell pepper (finely chopped)
  • 0.5 cup Onion (finely chopped)
  • 0.25 cup Scallions (finely chopped)
  • 0.25 cup Celery (finely chopped)
  • 0.5 piece Scotch bonnet pepper (finely minced)
  • 2 tablespoons Fresh parsley (chopped)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Vegetable oil (for frying)

Directions

Step 1

Prepare the conch by cleaning it thoroughly and dicing it into very small pieces. Set aside.

Step 2

In a large mixing bowl, combine the dry ingredients: flour, cornmeal, baking powder, paprika, salt, and black pepper.

Step 3

In a separate bowl, whisk together the egg and milk until smooth.

Step 4

Gradually add the wet mixture to the dry ingredients, stirring until just combined.

Step 5

Fold in the diced conch, bell peppers, onion, scallions, celery, minced Scotch bonnet pepper, parsley, and garlic. Mix until evenly distributed and you get a thick batter.

Step 6

In a deep skillet or heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Step 7

Using a tablespoon or small scoop, drop spoonfuls of the batter into the hot oil, taking care not to overcrowd the pan.

Step 8

Fry the fritters for 2-3 minutes per side, or until they are golden brown and cooked through.

Step 9

Remove the fritters with a slotted spoon and drain on a plate lined with paper towels.

Step 10

Repeat with the remaining batter, ensuring the oil is at the correct temperature for each batch.

Step 11

Serve the fritters warm with your favorite dipping sauce, such as a spicy mayo or tartar sauce.
