Ingredients

  • 1 pound conch meat, cleaned and chopped
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 2 teaspoons baking powder
  • 1 large egg
  • 1 cup milk
  • 1 small onion, finely chopped
  • 0.5 green bell pepper, finely chopped
  • 1 tablespoon jalapeño chili, seeded and minced
  • 2 cloves garlic, minced
  • 2 tablespoons cilantro, chopped
  • 1 teaspoon hot sauce
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups cooking oil, for frying
  • 4 lemon wedges, for serving

Directions

Step 1

Prepare the conch meat by pounding it with a meat mallet until tender. Chop it into small pieces and set aside.

In a large mixing bowl, combine the flour, cornmeal, and baking powder.

In a separate bowl, whisk the egg and then mix it with milk.

Add the chopped onion, bell pepper, jalapeño, garlic, cilantro, and conch meat to the flour mixture.
