Ingredients

  • 2 pieces (1-1.5 pounds each) Pork tenderloin
  • 0.5 cup Soy sauce
  • 0.25 cup Brown sugar
  • 2 tablespoons Dijon mustard
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh rosemary, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a medium bowl, whisk together the soy sauce, brown sugar, Dijon mustard, minced garlic, olive oil, fresh rosemary, salt, and black pepper to create the marinade.

Step 2

Place the pork tenderloins in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork and seal the bag (or cover the dish). Refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Step 3

Preheat your oven to 400°F (200°C).

Step 4

Remove the pork tenderloins from the marinade and shake off any excess. Reserve the marinade for later use.

Step 5

Heat a large oven-safe skillet over medium-high heat. Add a drizzle of olive oil to the pan and sear the pork tenderloins on all sides until they develop a golden-brown crust, about 2-3 minutes per side.

Step 6

Transfer the skillet with the pork tenderloins to the preheated oven. Roast for 18-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C) when tested with a meat thermometer.

Step 7

While the pork is roasting, pour the reserved marinade into a small saucepan. Bring it to a boil over medium-high heat, then reduce the heat to low and let it simmer for 5-7 minutes to create a sauce. Stir occasionally to prevent burning.

Step 8

Remove the pork from the oven and let it rest for 5-10 minutes before slicing. This helps retain its juices.

Step 9

Slice the pork tenderloins into medallions and drizzle with the prepared sauce. Serve immediately with your choice of sides.
