  • 4 pieces boneless, skinless chicken breasts

  • 3 cloves garlic cloves, minced
  • 1 cup chicken broth
  • 0.5 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves
  • 3 cups baby spinach
  • 1.5 cups cherry tomatoes, halved
  • 0.25 cups Parmesan cheese, freshly grated

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and paprika.

Step 2

In a large skillet or sauté pan, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, until golden brown. Remove the chicken from the pan and set aside.

Step 3

Reduce the heat to medium and add the butter to the same pan. Once melted, add the diced onion and cook until softened, about 4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
