Ingredients

  • 1 cup Couscous
  • 1 cup Vegetable broth (or chicken broth)
  • 2 tablespoons Olive oil

  • 0.25 teaspoon Black pepper
  • 1 medium Red bell pepper (diced)
  • 1 medium Cucumbers (deseeded and diced)
  • 1 cup Cherry tomatoes (halved)
  • 0.5 small Red onion (finely chopped)
  • 0.5 cup Flat-leaf parsley (chopped)
  • 0.25 cup Fresh mint (chopped)
  • 0.5 cup Feta cheese (crumbled, optional)
  • 0.25 cup Slivered almonds (toasted, optional)

Directions

Step 1

In a medium saucepan, bring the vegetable broth to a boil. Remove from heat and stir in 1 tablespoon of olive oil, 0.5 teaspoon of salt, and the couscous. Cover the pan with a lid and let it sit for 5 minutes.

Step 2

After 5 minutes, fluff the couscous with a fork to separate the grains. Transfer it to a large mixing bowl and let it cool to room temperature.

Step 3

While the couscous is cooling, prepare the vegetables. Dice the red bell pepper, deseed and dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.

Once the couscous has cooled, add the prepared vegetables (red bell pepper, cucumber, cherry tomatoes, and red onion) to the bowl.

Add the chopped parsley and mint to the couscous mixture, stirring gently to combine.

In a small bowl, whisk together the remaining olive oil, lemon juice, black pepper, and a pinch of salt. Pour the dressing over the couscous and toss to evenly coat.

If using, gently fold in the crumbled feta cheese and toasted slivered almonds for added flavor and texture.

Taste and adjust seasoning as needed. Add more lemon juice, salt, or pepper if desired.
