Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese (shredded)
  • 1 cup Gruyère cheese (shredded)
  • 1 cup Parmesan cheese (grated)
  • 1 tsp Dijon mustard
  • 0.5 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup breadcrumbs
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley (chopped, optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the elbow macaroni in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside.

Step 3

In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a smooth roux. Cook for 1–2 minutes, stirring constantly.

Step 4

Slowly pour in the milk and heavy cream, whisking continuously to avoid lumps. Bring the mixture to a simmer and cook until it thickens, about 3–5 minutes.

Step 5

Reduce the heat to low and stir in the shredded cheddar, Gruyère, and Parmesan cheeses until melted and smooth.

Step 6

Add the Dijon mustard, paprika, salt, and black pepper to the cheese sauce. Stir well to combine.

Step 7

Mix the cooked macaroni into the cheese sauce, ensuring all the pasta is evenly coated.

Step 8

Transfer the macaroni and cheese to a greased 9x13-inch baking dish.

Step 9

In a small bowl, toss the breadcrumbs with olive oil until evenly coated. Sprinkle the breadcrumb mixture evenly over the top of the macaroni.

Step 10

Bake in the preheated oven for 20 minutes or until the top is golden brown and crispy.

Step 11

Remove from the oven and let the dish sit for 5 minutes before serving. Garnish with chopped parsley if desired.
