  • 2 tablespoons tomato paste
  • 1 cup dry red wine
  • 4 cups beef stock
  • 2 bay leaves
  • 3 fresh thyme sprigs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 1 cup frozen peas
  • 2 tablespoons all-purpose flour
  • 2 tablespoons water

Directions

Step 1

Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat.

Step 2

Season the beef cubes with salt and pepper, then brown them in batches to avoid overcrowding the pan. Set the browned beef aside.

Step 3

Add the remaining tablespoon of olive oil to the pot. Sauté the diced onion until softened, about 5 minutes.

Stir in the minced garlic and cook for 1 minute until fragrant.
