Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 0.25 cup All-purpose flour
  • 2 cups Chicken broth
  • 1 cup Whole milk
  • 1.5 cups Frozen mixed vegetables (e.g., peas, carrots, corn, green beans)
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon Fresh parsley, chopped
  • 2 pieces Refrigerated pie crusts
  • 1 piece Egg, beaten (optional, for egg wash)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Season the chicken breasts with salt and pepper.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-8 minutes per side until golden and fully cooked. Remove from the skillet, let rest for 5 minutes, then dice into bite-sized pieces.

Step 4

In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden and bubbly.

Step 5

Slowly pour in the chicken broth, whisking constantly to prevent lumps. Add the milk and continue to whisk. Cook for 3-4 minutes until the mixture thickens into a creamy sauce.

Step 6

Stir in the diced chicken, frozen mixed vegetables, thyme, and parsley. Remove from heat and set the filling aside to cool slightly.

Step 7

Roll out one pie crust and fit it into the bottom of a 9-inch pie dish, trimming any excess crust that hangs over the edges.

Step 8

Pour the chicken and vegetable filling into the prepared crust.

Step 9

Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal the top and bottom crusts together. Cut a few small slits in the top crust to allow steam to escape.

Step 10

If desired, brush the top crust with beaten egg for a golden finish.

Step 11

Bake the pot pie in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.

Step 12

Let the pot pie rest for 10 minutes before slicing and serving. Enjoy!
