  • 0.5 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 0.25 cups Parmesan cheese, grated
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken breasts dry with a paper towel and season them with half of the salt and pepper.

Step 3

In a large oven-safe skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat.

Sear the chicken breasts for 2-3 minutes per side, until golden brown. Remove them from the skillet and set aside.

Add the remaining tablespoon of butter to the skillet. Once melted, add the mushrooms and onions. Sauté for about 5 minutes, until softened and slightly golden.
