  • 115 grams Unsalted butter
  • 170 grams Bittersweet chocolate, chopped
  • 3 Large eggs
  • 100 grams Granulated sugar
  • 30 grams All-purpose flour
  • 15 grams Unsalted butter (for greasing ramekins)
  • 10 grams Cocoa powder (for dusting ramekins)
  • 120 grams White chocolate, chopped
  • 120 milliliters Heavy cream
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 200°C (400°F) and place a baking sheet in the middle rack to heat.

Step 2

Grease four 6-ounce ramekins with unsalted butter and dust with cocoa powder. Tap out the excess cocoa powder.

Step 3

In a heatproof bowl set over a saucepan of simmering water (double boiler), melt the 115 grams of unsalted butter and 170 grams of chopped bittersweet chocolate. Stir until smooth and remove from heat to cool slightly.

In a separate bowl, whisk together 3 eggs and 100 grams of granulated sugar until the mixture is pale and frothy, about 2 minutes.

Remove the soufflé cakes from the oven and allow them to cool for 2 minutes. Run a knife around the edges of each ramekin to loosen, then carefully invert them onto individual plates.
