Ingredients

  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 medium carrots, peeled and sliced
  • 2 medium celery stalks, sliced
  • 3 cloves garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.25 teaspoons crushed red pepper flakes (optional)
  • 28 ounces canned diced tomatoes (with juices)
  • 6 cups low-sodium chicken broth
  • 4 cups kale leaves, ribs removed and chopped
  • 15 ounces cannellini beans, drained and rinsed
  • 1 cup uncooked small pasta (like ditalini or orzo)
  • 0 freshly grated Parmesan cheese (optional, for garnish)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it up into crumbles, until browned and fully cooked, about 8 minutes. Remove the sausage from the pot with a slotted spoon and set aside, leaving the rendered fat in the pot.

Step 2

Add the olive oil to the pot with the rendered sausage fat. Stir in the diced onion, carrots, and celery. Cook until the vegetables are softened, about 5-6 minutes.

Step 3

Add the minced garlic, dried oregano, dried basil, and crushed red pepper flakes (if using). Stir and cook for another 1 minute until fragrant.

Step 4

Pour in the canned diced tomatoes (with their juices) and chicken broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10 minutes.

Step 5

While the soup is simmering, rinse and prepare the kale and beans. Add the chopped kale and cannellini beans to the pot. Return the cooked sausage to the pot as well. Simmer for another 10 minutes.

Step 6

Stir in the uncooked pasta and let it cook directly in the soup until tender (according to package instructions, approximately 8-10 minutes).

Step 7

Taste the soup and season with salt and black pepper as needed.

Step 8

Serve hot, garnished with freshly grated Parmesan cheese, if desired. Enjoy your comforting Italian-style soup!
