Directions

Step 1

Peel the potatoes and chop them into small, evenly sized cubes (about 1/2 inch). Set aside.

In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onions and cook for 3-4 minutes, stirring occasionally, until they are softened and translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.
