Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic cloves, minced
  • 3 medium carrots, peeled and chopped
  • 2 stalks celery stalks, chopped
  • 1 medium potato, peeled and cubed
  • 1 medium zucchini, chopped
  • 4 cups vegetable broth
  • 1 piece bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup heavy cream (optional, for extra silkiness)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for 4-5 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the carrots, celery, potato, and zucchini to the pot. Stir well to combine.

Step 5

Pour in the vegetable broth and add the bay leaf, salt, and black pepper.

Step 6

Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, or until all the vegetables are tender.

Step 7

Remove and discard the bay leaf. Using an immersion blender, puree the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a blender and puree until silky.

Step 8

If desired, stir in the heavy cream for an extra creamy texture and heat the soup gently until warmed through.

Step 9

Taste and adjust seasoning with more salt and pepper if necessary.

Step 10

Serve warm, garnished with a sprinkle of fresh parsley.
