Ingredients

  • 6 large Egg yolks
  • 0.75 cup Granulated sugar
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground nutmeg
  • 1 whole Cinnamon stick
  • 0.5 cup Bourbon or dark rum (optional)
  • 0 optional Freshly grated nutmeg (for garnish)

Directions

Step 1

In a medium bowl, whisk together the egg yolks and granulated sugar until the mixture is thick and pale yellow.

Step 2

In a medium saucepan, combine the milk, heavy cream, cinnamon stick, and ground nutmeg. Heat the mixture over medium heat, stirring occasionally, until it begins to simmer. Do not let it boil.

Step 3

Temper the egg yolks by gradually adding a ladleful of the hot milk mixture into the yolks while constantly whisking. Repeat this process with 2-3 more ladles to gently warm the egg mixture.

Step 4

Pour the tempered egg mixture back into the saucepan with the remaining milk mixture. Cook over medium-low heat, stirring constantly with a wooden spoon, until the mixture thickens enough to coat the back of the spoon (approximately 160-170°F). Do not let the mixture boil, as it could curdle.

Step 5

Remove the saucepan from heat and stir in the vanilla extract. If using, add the bourbon or dark rum at this step.

Step 6

Strain the eggnog through a fine-mesh sieve to ensure a smooth texture. Allow it to cool to room temperature, then refrigerate for at least 2 hours or until chilled.
