  • 454 grams firm tofu
  • 1 medium, finely chopped onion
  • 2 minced garlic cloves
  • 1 medium, grated carrot
  • 120 grams breadcrumbs
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 2 tablespoons ground flaxseed
  • 5 tablespoons water
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 1 tablespoon olive oil
  • 3 tablespoons ketchup

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan.

In a small bowl, combine the ground flaxseed and water. Stir and let it sit for 5 minutes to thicken; this will act as your egg substitute.

Drain the tofu and press it between paper towels or a clean kitchen towel to remove excess moisture. Once pressed, crumble the tofu into a large mixing bowl.
