Ingredients

  • 1 pound Ground beef
  • 2 cups Fresh spinach
  • 0.5 cup Breadcrumbs
  • 0.25 cup Parmesan cheese, grated
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 2 medium Carrots, diced
  • 2 Celery stalks, diced
  • 1 medium Yellow onion, diced
  • 6 cups Chicken or vegetable broth
  • 1 Bay leaf
  • 0.75 cup Small pasta (e.g., ditalini or orzo)
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine ground beef, finely chopped spinach, breadcrumbs, grated Parmesan, egg, minced garlic, dried oregano, salt, and black pepper. Mix everything until just combined, being careful not to overwork the meat.

Step 3

Shape the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

Step 4

Bake the meatballs for 12-15 minutes until lightly browned and cooked through. Set them aside.

Step 5

While the meatballs are baking, heat olive oil in a soup pot over medium heat. Add diced carrots, celery, and onion. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 6

Pour in the chicken or vegetable broth and add the bay leaf. Bring the mixture to a simmer.

Step 7

Add the small pasta to the simmering broth and cook according to the package instructions, usually 6-8 minutes, until tender.

Step 8

Gently add the baked spinach meatballs to the soup and let them warm through for 2-3 minutes.

Step 9

Remove the bay leaf, taste the soup, and adjust seasoning with additional salt and pepper if needed.

Step 10

Ladle the soup into bowls, garnish with chopped fresh parsley, and serve warm for a comforting meal.
