Prepare the noodles by blanching them in boiling water for 2-3 minutes or according to package instructions. Drain and rinse with cold water. Set aside.
Cut the chicken breast into thin strips and place it in a bowl. Add 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and 1 teaspoon of cornstarch. Mix well and let marinate for 10 minutes.
