Ingredients

  • 4 pieces Flour tortillas
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded mozzarella cheese
  • 1 medium, diced Red bell pepper
  • 1 medium, diced Yellow bell pepper
  • 1 medium, diced Green bell pepper
  • 1 small, finely chopped Red onion
  • 1 cup Baby spinach
  • 1 cup (cooked) Sweet corn kernels
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup (for serving) Sour cream
  • 0.5 cup (for serving) Salsa

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the diced red, yellow, and green bell peppers, along with the chopped red onion. Sauté for 5-7 minutes until the vegetables are softened.

Step 3

Stir in the cooked sweet corn kernels, ground cumin, chili powder, salt, and black pepper. Cook for another 2 minutes to blend the flavors.

Step 4

Remove the vegetable mixture from the skillet and set aside.

Step 5

Wipe the skillet clean and heat the remaining 1 tablespoon of olive oil over medium heat.

Place one flour tortilla onto the skillet. Evenly sprinkle a mixture of shredded cheddar and mozzarella cheeses onto one half of the tortilla.
