Ingredients

  • 1 medium head Red cabbage
  • 2 large Carrot
  • 1 medium Red bell pepper
  • 4 stalks Green onion
  • 0.25 cup Fresh cilantro
  • 0.25 cup Sunflower seeds
  • 3 tablespoons Olive oil
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves of the red cabbage, then cut it in half and remove the core. Thinly slice the cabbage into shreds and place it in a large mixing bowl.

Step 2

Peel and grate the carrots using a box grater or food processor. Add the grated carrots to the mixing bowl.

Step 3

Dice the red bell pepper into small pieces and add it to the bowl.

Step 4

Thinly slice the green onions and chop the fresh cilantro. Add both to the bowl with the other vegetables.
