Ingredients

  • 2 pieces (about 1 pound) chicken breast
  • 3 tablespoons soy sauce
  • 2 teaspoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 large (sliced into strips) red bell pepper
  • 1 large (sliced into strips) yellow bell pepper
  • 1 large (sliced into strips) green bell pepper
  • 1.5 cups (shredded) purple cabbage
  • 1 cup snap peas
  • 3 cloves (minced) garlic
  • 1 teaspoon (grated) ginger
  • 3 tablespoons hoisin sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 2 stalks (chopped for garnish) green onion
  • 1 tablespoon (for garnish) sesame seeds
  • 4 servings (optional, for serving) white rice or noodles

Directions

Step 1

Thinly slice the chicken breast into bite-sized strips. In a medium bowl, mix 2 tablespoons of soy sauce and the cornstarch. Add the chicken, toss to coat, and let marinate for 10 minutes.

Step 2

While the chicken marinates, prepare the vegetables by slicing the bell peppers, shredding the cabbage, and trimming the ends off the snap peas.

Step 3

In a small bowl, whisk together the hoisin sauce, oyster sauce, rice vinegar, honey, sesame oil, and the remaining 1 tablespoon of soy sauce. Set aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir fry for 3-4 minutes, or until cooked through. Remove the chicken from the skillet and set aside.

Step 5

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the minced garlic and grated ginger and stir for about 30 seconds until fragrant.

Add the red, yellow, and green bell peppers, along with the purple cabbage and snap peas. Stir fry for 3-5 minutes, or until the vegetables are tender-crisp.

Step 7

Return the cooked chicken to the skillet and pour the prepared sauce over the mixture. Toss everything together to evenly coat the ingredients in the sauce and cook for an additional 2 minutes.

Step 8

Remove the skillet from heat and garnish the stir fry with chopped green onion and sesame seeds.

Step 9
