Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 pieces garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 2 medium carrot, peeled and sliced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 15-ounce can canned black beans, drained and rinsed
  • 1 15-ounce can canned red kidney beans, drained and rinsed
  • 1 15-ounce can canned chickpeas, drained and rinsed
  • 1 14.5-ounce can canned diced tomatoes with juices
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups baby spinach
  • 1 cup shredded cheese (optional, for topping)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the olive oil in a large oven-safe skillet or casserole dish over medium heat.

Step 3

Sauté the diced onion and minced garlic for 2-3 minutes, until the onion is translucent and fragrant.

Step 4

Stir in the diced red bell pepper, sliced carrots, and green beans. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften.

Step 5

Add the black beans, kidney beans, chickpeas, diced tomatoes with their juices, and vegetable broth to the skillet. Mix well.

Step 6

Sprinkle in the ground cumin, smoked paprika, dried oregano, salt, and black pepper. Stir to combine.

Step 7

Bring the mixture to a gentle simmer and cook for 15 minutes, allowing the flavors to meld together and the vegetables to become tender.

Step 8

Stir in the baby spinach and let it wilt into the stew for about 2 minutes.

Step 9

If desired, sprinkle shredded cheese evenly over the top of the stew. Transfer the skillet or casserole dish to the preheated oven.

Step 10

Bake uncovered for 10-12 minutes, or until the cheese is melted and bubbling (if using).

Step 11

Carefully remove the casserole from the oven and let it cool for a few minutes before serving.

Step 12

Sprinkle with chopped fresh parsley as a garnish, if desired. Serve warm and enjoy your Colorful Bean Stew Casserole!
