Ingredients

  • 1 cup Popcorn kernels
  • 2 tablespoons Vegetable oil
  • 1 cup Granulated sugar
  • 1 4 cup Water
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Food coloring (any color)
  • 1 pinch Salt (optional)

Directions

Step 1

In a large pot with a tight-fitting lid, heat the vegetable oil over medium heat. Add 2-3 popcorn kernels as testers. Once they pop, the oil is ready.

Step 2

Pour the popcorn kernels into the pot. Cover it with the lid and shake the pot occasionally to ensure even popping. Once the popping slows down, remove the pot from the heat and transfer the popcorn to a large bowl. Set aside.

Step 3

In a medium saucepan, combine the sugar, water, and butter. Heat over medium heat, stirring continuously, until the sugar is fully dissolved.

Step 4

Allow the mixture to begin boiling. Stop stirring and let it boil for 3-5 minutes or until it reaches a slightly syrupy consistency.

Step 5

Remove the saucepan from the heat and quickly stir in the vanilla extract and food coloring, mixing until fully combined. The syrup should have a vibrant color at this point.

Step 6

Immediately pour the colored syrup over the popcorn. Use a spatula or wooden spoon to carefully toss the popcorn, ensuring all kernels are evenly coated in the syrup.

Step 7

Spread the coated popcorn onto a large baking sheet lined with parchment or wax paper to cool. Break apart any large clumps using your hands while the syrup is still warm if needed.

Step 8

Let the colored popcorn cool completely, allowing the syrup to harden slightly. Sprinkle with a pinch of salt (if desired) for a sweet-and-salty contrast before serving.
