Ingredients

  • 115 grams unsalted butter
  • 200 grams brown sugar, packed
  • 2 large eggs
  • 80 milliliters molasses
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 100 grams chopped walnuts or pecans
  • 75 grams raisins (optional)
  • 2 tablespoons powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9x13-inch baking dish or line it with parchment paper.

Step 2

In a large mixing bowl, cream together the butter and brown sugar with a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the eggs, one at a time, and mix until fully incorporated. Then stir in the molasses, blending well.

Step 4

In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

Step 6

Fold in the chopped nuts and raisins (if using) with a spatula, ensuring they are evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared baking dish, spreading it out evenly with a spatula.

Step 8

Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted in the center comes out clean.

Step 9

Remove from the oven and allow the bars to cool completely in the pan on a wire rack.

Step 10

Once cooled, optionally dust the top with powdered sugar for a decorative finish.

Step 11

Cut into 16 squares or rectangles and serve. Store leftovers in an airtight container at room temperature for up to 5 days.
