Peel the potatoes and carrots. Cut the potatoes into bite-sized cubes and dice the carrots into small pieces.
Place the cubed potatoes in a large pot of salted water. Bring to a boil over medium-high heat and cook for 12-15 minutes, or until they are fork-tender. Remove them with a slotted spoon and set aside to cool.
In the same pot, add the diced carrots and cook for 3-5 minutes, or until tender. Drain and allow them to cool.
Cook the green peas in boiling water for 2-3 minutes if fresh or frozen. If using canned peas, drain and rinse well. Set aside.
Chop the hard-boiled eggs into small pieces. Finely dice the onion.
