Ingredients

  • 1 pound Ground pork sausage
  • 1 cup Cornmeal
  • 3 cups Chicken broth
  • 0.25 cup All-purpose flour
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Cooking oil or butter (for frying)

Directions

Step 1

In a large skillet over medium heat, cook the ground pork sausage until browned and fully cooked, breaking it apart with a spoon as it cooks. Drain any excess grease if necessary.

Step 2

In a medium saucepan, bring the chicken broth to a boil over medium-high heat.

Step 3

While the broth is heating, whisk together the cornmeal and flour in a small bowl. Gradually add the dry mixture to the boiling chicken broth, stirring constantly to prevent lumps.

Step 4

Reduce the heat to low and stir in the garlic powder, onion powder, salt, and black pepper. Add the cooked sausage to the saucepan and stir well to combine.

Step 5

Cook the scrapple mixture on low heat for about 10 minutes, stirring frequently, until it thickens to a paste-like consistency.

Step 6

Transfer the scrapple mixture to a greased loaf pan, spreading it evenly. Let it cool to room temperature, then refrigerate for at least 1 hour, or until set and firm.

Step 7

Once the scrapple has set, remove it from the loaf pan and slice it into 1/2-inch-thick pieces.

Step 8

Heat a skillet over medium heat and add the cooking oil or butter. Fry the scrapple slices for 3-4 minutes on each side, or until golden brown and crispy.

Step 9

Serve immediately, plain or with your favorite condiments like ketchup, maple syrup, or hot sauce.
