Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 12 ounces andouille sausage, sliced
  • 1 pound shrimp, peeled and deveined
  • 1 piece green bell pepper, diced
  • 2 pieces celery stalks, diced
  • 1 piece onion, diced
  • 15 ounces diced tomatoes
  • 2 cups chicken broth
  • 2 tablespoons tomato paste
  • 3 cloves minced garlic
  • 2 tablespoons Cajun seasoning blend
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup white rice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons parsley for garnish (optional)

Directions

Step 1

Prepare the chicken breasts by cutting them into bite-sized pieces, about 1-inch cubes.

Step 2

Heat the olive oil in a skillet over medium heat and sear the chicken pieces until lightly browned. This step helps to lock in the flavors. Set the chicken aside.

Step 3

In the same skillet, lightly brown the slices of andouille sausage. This enhances the smoky flavor. Set the sausage aside.

Step 4

In your slow cooker, add the diced tomatoes (with their liquid), chicken broth, tomato paste, diced green bell pepper, celery, onion, and minced garlic.

Step 5

Sprinkle in the Cajun seasoning, dried thyme, paprika, salt, and black pepper. Stir everything to combine.

Step 6

Place the browned chicken and sausage into the slow cooker. Stir gently to mix the meat with the vegetables and spices.

Step 7

Cover the slow cooker with its lid and cook on low heat for 4 hours.

Step 8

After 4 hours, add the white rice and stir it into the mixture. Replace the lid and cook for another 1.5 to 2 hours on low until the rice is tender and has absorbed the liquid.

Step 9

About 20 minutes before serving, gently fold in the shrimp, taking care not to overcook them. The shrimp will turn pink and become opaque when fully cooked.

Step 10

Taste and adjust seasoning as needed with additional salt or Cajun seasoning.

Step 11

Serve the jambalaya hot, garnished with freshly chopped parsley if desired.
