  • 2 pounds Russet potatoes
  • 4 tablespoons Butter
  • 2 cups Green cabbage
  • 1 cup Kale
  • 1 cup Whole milk
  • 4 stalks Scallions (green onions)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and chop the potatoes into evenly sized chunks. Place them in a large pot and cover with cold water. Add a pinch of salt, and bring the water to a boil over medium-high heat. Reduce the heat to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.

Step 2

While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add the chopped cabbage and kale, stirring occasionally. Cook for 5-7 minutes or until the vegetables are softened. Remove from heat and set aside.
