  • 1 smoked ham hock
  • 4 slices bacon
  • 1 yellow onion

  • 1 tbsp sugar

Directions

Step 1

Rinse the collard greens thoroughly under cold running water to remove any dirt or grit. Remove the tough stems and ribs from the greens, then roughly chop the leaves into bite-sized pieces. Set aside.

In a large Dutch oven or heavy-bottomed pot, cook the bacon slices over medium heat until crisp. Remove the bacon and set aside on a paper towel-lined plate to cool. Leave about 2 tablespoons of bacon grease in the pot.

Add the diced onion to the pot and sauté in the bacon grease over medium heat until soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently, until fragrant.

Place the smoked ham hock into the pot along with the cooked onions and garlic. Pour in the chicken broth and water. Stir in the salt, black pepper, crushed red pepper flakes, and sugar. Bring to a gentle boil over medium-high heat.
