  • 2 cups black-eyed peas, rinsed and drained
  • 4 cups collard greens, stems removed and chopped
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Add the diced onion, carrot, and celery to the pot. Sauté for 5-7 minutes, or until the vegetables are softened.
