Ingredients

  • 4 cups Green cabbage
  • 2 cups Red cabbage
  • 1 large Carrot
  • 1 large Apple (preferably a crisp variety like Fuji or Granny Smith)
  • 1 medium Banana
  • 0.5 cup Mayonnaise
  • 0.25 cup Greek yogurt
  • 2 tablespoons Lemon juice
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Finely shred the green and red cabbage and place them in a large mixing bowl.

Step 2

Peel and grate the carrot, then add it to the bowl with the cabbage.

Step 3

Core the apple and cut it into thin matchstick-sized pieces. Alternatively, you can shred the apple. Add it to the bowl.

Step 4

Slice the banana into thin rounds and gently toss it with 1 tablespoon of lemon juice to prevent browning. Then, add it to the bowl of vegetables.

Step 5

In a small bowl, whisk together the mayonnaise, Greek yogurt, remaining 1 tablespoon of lemon juice, honey, salt, and black pepper until smooth and well combined.

Step 6

Pour the dressing over the cabbage mixture and gently toss everything together until evenly coated. Be careful not to mash the banana slices while mixing.

Step 7

Taste and adjust the seasoning with more salt, pepper, or lemon juice if needed.

Step 8

Chill the coleslaw in the refrigerator for at least 15 minutes to allow the flavors to meld together.

Step 9

Serve the coleslaw cold as a side dish or enjoy it on its own for a light and fruity snack!
