Ingredients

  • 8 ounces rice noodles
  • 1 pound shrimp (peeled and deveined)
  • 1 large cucumber (sliced into thin matchsticks)
  • 1 large carrot (shredded)
  • 1 medium red bell pepper (thinly sliced)
  • 0.5 cup fresh cilantro (chopped)
  • 3 green onions (thinly sliced)
  • 0.25 cup peanuts (chopped for garnish)
  • 3 tablespoons soy sauce
  • 3 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons peanut butter (smooth or creamy)
  • 1.5 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger (grated)
  • 2 cloves garlic (minced)
  • 0.5 teaspoon salt
  • 0.25 teaspoon crushed red pepper flakes (optional)

Directions

Step 1

Cook the rice noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

In a large pot of boiling water, cook the shrimp for 2-3 minutes or until they turn pink and opaque. Drain and allow to cool completely.

Step 3

Prepare the vegetables: slice the cucumber into thin matchsticks, shred the carrot, and thinly slice the red bell pepper.

Step 4

In a small bowl, whisk together the soy sauce, lime juice, peanut butter, honey, sesame oil, grated ginger, minced garlic, salt, and crushed red pepper flakes (if using) to make the dressing. Adjust seasoning to taste.

Step 5

In a large mixing bowl, combine the cooked noodles, shrimp, cucumber, carrot, bell pepper, cilantro, and green onions.

Step 6

Pour the prepared dressing over the noodle mixture and toss gently to coat everything evenly.

Step 7

Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

Step 8

Before serving, garnish with chopped peanuts for a satisfying crunch.

Step 9

Serve chilled and enjoy!
