Ingredients

  • 2 tablespoons fresh parsley
  • 5 leaves fresh basil leaves

  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 0.25 cup plain Greek yogurt (optional for garnish)

Directions

Step 1

Wash and roughly chop the cucumber, tomatoes, red bell pepper, and red onion.

Peel and crush the garlic cloves.

In a blender or food processor, combine the cucumber, tomatoes, red bell pepper, onion, garlic, olive oil, red wine vinegar, and cold water.
